Breakfast Roast Potatoes
One bag of East Riding Farm Breakfast Roast Potatoes,
5/6 slices of bacon, cooked and crumbled,
2 medium onions, diced,
Chopped fresh rosemary, for garnish,
Chopped fresh thyme, for garnish

Cook the bacon slices in a skillet, removing with slotted spoon to a paper towel-lined plate to drain. Reserve oil from bacon for taste. Preheat oven to 450°F.
In large bowl, combine the potatoes, onions, herbs and seasonings with the reserved bacon oil and toss well to coat the potatoes evenly.
Arrange in single layer on baking tray. Bake for about 20 minutes, tossing halfway through, until the potatoes are golden brown and crispy.
Top with crumbled bacon pieces and chopped fresh herbs to garnish.
Optional ingredients: use ham instead of bacon. Add chopped green peppers and onions
