Cracked Pepper Wedges with a Salsa Dip

Ingredients

One pack of East Riding Farm Cracked
Pepper Wedges
1 x 375g jar of sweet red peppers
3 x medium tomatoes, roughly chopped
1 tbsp. sundried tomato paste
1 bunch of chives, chopped

Method

Heat the Cracked Pepper Wedges as per guidelines.
Drain the jar of sweet red peppers and tip them into a food processor or blender.
Add the tomatoes (roughly chopped), sundried tomato paste and most of the bunch of chives (chopped).
Pulse in blender until mixed but still chunky
Season with pepper and spoon half into a serving dish; sprinkle over the remaining chives and serve with the wedges


Optional: For additional kick, add red pepper flakes or Tabasco to taste
